Daejak is the deepest green of all the Jaksul grades, and this example from Mt. Jiri in Hadong County is a flavorful offering. Hand plucked just before Ipha (the beginning of the summer season) and then pan fired by hand in the traditional manner. This is a rich tasting late spring offering.
